Gluten Free, Soy Free, Dairy Free Beef Stroganoff

I've been craving comfort foods - it's cold, it's cloudy, and I have a baby so I spend most of my days in the house. I found some noodles at the store that look like egg noodles and I decided that it was time to try and make some gluten free, soy free, dairy free beef stroganoff.  I've had a container of Pacific Creamy Portabella Mushroom soup in the pantry for months to try and create this recipe. Growing up my mom always made her beef stroganoff with Cream of Mushroom soup - she also didn't … [Read more...]

Portuguese Kale and Chorizo Soup Slow Cooker Recipe, Gluten Free, Soy Free

So, the weather's finally turned freezing here in Chicago so it's time to get the kale out of the ground. I still feel like a really crazy new mother without a ton of time to cook or eat, so I've decided to make some soup. Amazing because I can dump everything a pot, and I can eat it one bite at a time as I have time :) This can be made on the stove top, but I decided to make it in the crock pot because I just don't have the time to watch a pot on the stove. The soup is great the day it's made … [Read more...]

Gluten Free, Soy Free Teriyaki Beef Recipe

So.... I am now a proud momma of a 13 week old baby boy. You didn't know you say? I know,  I didn't tell you.  Needless to say, that's the reason I haven't posted in about 13 weeks.  Life has gotten a lot busier since having the little one, but unfortunately, the diet must stay the same. What does that mean? I've been eating a lot of corn chips...and so I can get some vegetables....salsa. Today I feel a lot more sane. The baby has gotten into a really good sleep schedule. Me and the hubby are … [Read more...]

Organic Canning: Bread and Butter Pickles Recipe

My pickling cucumbers are finally starting to produce quick enough that I can start making pickles.  My favorite? Bread and butter pickles! This was the first type of pickle I ever canned and a favorite with my family and friends! My grandma said, "Well, I thought I made the best bread and butter pickles but I might be wrong"! We can eat a jar a day.  Last year I didn't make enough - Only 2 batches and I had family begging for more.    This is my second batch of this year and I'm hoping to make … [Read more...]

Gluten Free, Dairy Free, Pasta Primavera with Garlic Butter Sauce Recipe

Pasta Primavera is a dish that consists of pasta and veggies - perfect, because that's what I have! I loaded up at the farmers market last week and I have TONS of veggies that should be used up in the next few days. I'm not sure why but ever since being GF and DF I've only made pasta with marinara sauce. I never even thought about trying anything else.  I'm literally drooling right now while writing this.  The left overs of this pasta primavera are gone and I want more! Pasta Primavera with … [Read more...]

Organic Canning: Pickled Cherry Tomatoes with Rosemary

What should I do with tons of cherry tomatoes? I have WAY too many to eat plain, so I'm making pickled cherry tomatoes! I have been harvesting a pint or so every two days.  I'm now to the point where I have 15 cups + additional for eating - enough for 3 batches!  These pickled cherry tomatoes would be great in a holiday relish tray (yes, I'm bringing them back) or as an appetizer served with some crusty gf bread.  This recipe also came from my 2011 Better Homes and Gardens Canning Magazine - Of … [Read more...]

How to Cook Sea Scallops: Pan Seared Sea Scallops Recipe

Pan seared scallops aren't on the menu very often - why? Because they're like $3.00 each! Occassionally we'll pick a few up to accompany something else. They're super quick, easy, and delicious. My husband and I don't have the same taste in TV.  If it was his choice, he'd have the Speed channel on 24/7.  Me, I'd rather be watching reality TV (guilty pleasure ok?).  The only thing we can compromise on is watching cooking shows, so naturally, that's usually whats on our TV.  My husband picked up … [Read more...]

When to Harvest Jalapeno Peppers? My Organic Garden

When do you harvest jalapeno peppers? Since they're picked when they're green (most of the time), it can be hard to tell. Peppers can be tricky to grow and a lot of years I end up spending more money and time than it's worth to even plant them, except for jalapenos. I'm not a huge fan of hot stuff so usually by mid-season I'm giving extras away to my heat loving colleagues.   I never really knew when to harvest them so I'd pick them whenever.  There is a "correct" time so this year, I'm making … [Read more...]

Dairy Free Creamy Cucumber Salad: Summer Side Dish Recipe

It can't be summer without cucumber salad!  Since going dairy-free I've been making cucumber salad sans dairy but my husband really misses the kind his grandma makes with sour cream.  I had a tub of plain coconut yogurt in my fridge and decided to experiment.  Here's the result! Because the salad is naturally a little sweet, the yogurt works really well as a creamy substitute. I like this salad best after it's been sitting in the fridge overnight. I'll probably be making this a few times in the … [Read more...]

Ham and Zucchini or Broccoli Quiche Recipe; Gluten Free, Dairy Free, Soy Free, Nut Free

This is a household favorite. I love this recipe because it's great with zucchini; it's also great with broccoli. Sometimes I make 2 of them on a Sunday and we'll bring it for breakfast to work.  It tastes just as great days after it's made.  It's also great to make if you're having company.  Bake the night before and just pop it in the oven to reheat in the morning. What else do I love about this?  1 carton of rice milk, 1 mini ham from Whole Foods, and 1 bunch of broccoli makes exactly 4 pies … [Read more...]
