Halloween DIY: Taxidermy Rat Wall Hanging

I started this post back in here I am the day before Halloween posting a Halloween craft! Oh well, you'll be ready for it next year :). I made these last year, they're relatively quick (depending on how good of a painter you are) and they're really fun as haunted house, haunted mansion, or apothecary table decor! I've looked around and so far I'm the FIRST AND ONLY person who has made these - woo hoo for creativity! I'm sure that won't be the case after I publish and promote this … [Read more...]

Apple Cider Glazed Pork Tenderloin with Roast Squash

Two weeks ago I made this and told my dad about it.  Last week I decided I wanted to have him over for dinner and told him I was going to make a root vegetable pot roast. He said no....he wanted this :).  It's good enough to have once a week so that's fine with me! I love fall food! Apples, pork, squash, cider - this is the perfect autumn dinner. It will definitely be on the menu every year when the leaves start to change! It also happens to be naturally gluten free, soy free, dairy free, nut … [Read more...]

Apple Fritter Pancakes with Cinnamon; Gluten Free, Dairy Free, Soy Free, Nut Free Recipe

The title makes these sound like they'd be really fattening and horrible for you doesn't it? Good news! All the flavor and texture of apple fritters but less sugar, less fat, no gluten, no dairy, no soy, no nuts :). These have only a tiny bit more sugar than my regular GF pancakes and they are great without the addition of maple syrup (so less sugar overall for us)! They are doughy on the inside, crispy around the edges, apple cinnamon-y goodness! They are the absolute perfect fall … [Read more...]

Italian Chicken with Red Skin Potatoes and Green Beans

I don't really cook many SUPER EASY dishes. "What!?" you say.  I know, I'm crazy right? Not really, most of the super easy dishes I used to make were full of gluten, dairy, soy and all kinds of preservatives and nasty stuff. Think, throw some rice in a baking dish. Top with chicken breasts and some type of jiggly, creamy, full of msg canned "soup". It's not that I don't like to cook easy stuff. It just tends to take a bit more prep time to cook a meal without that junk.  I stumbled across this … [Read more...]

Buttery Noodles with Butternut Squash and Caramelized Onions; Gluten Free, Soy Free, Dairy Free, Nut Free Recipe

Squash, squash and more squash! Its everywhere! In my garden, at the farmers market, on my mind :)! My husband hates most of it, except spaghetti squash (unfortunately) but I LOVE it! And it's super good for you!  At this exact moment I have a gluten free, soy free, dairy free, nut free pumpkin pie baking in the oven, acorn squash, butternut squash, banana squash and dumpling squash sliced awaiting the oven for my Apple Cider Glazed Pork Tenderloin with Roast Squash, and spaghetti squash left … [Read more...]
