Leek and Cauliflower Soup

This soup is so light and flavorful. It's great as a starter, a snack, paired with a salad for a light lunch, etc. It freezes perfectly! I freeze mine in pint sizes mason jars for single sized portions that I can reheat quickly on the stove. So, in usual style (which is late), Easter was yesterday.  I made a few different spring themed dishes for our Easter brunch, including gf mini chocolate coconut donut bird's nests, a bouquet of flower cupcakes (for my grandma's 86th Birthday which she recently celebrated) AND a few Easter egg fruit trays. Crab Stuffed Portabella Mushrooms; Gluten Free, Soy Free, Dairy Free, Nut Free, Egg Free Recipe

When I moved to Chicago almost 5 years ago I bought, on impulse, a big can of crab.  I had a bunch of portabella mushrooms in the fridge and I some how concocted some amazing crab stuffed portabella mushrooms as an appetizer for the grilled flank steak we were eating for dinner.  I love it when that happens!
