Leek and Cauliflower Soup

Leek and Cauliflower Soup (4)

This soup is so light and flavorful. It's great as a starter, a snack, paired with a salad for a light lunch, etc. It freezes perfectly! I freeze mine in pint sizes mason jars for single sized portions that I can reheat quickly on the stove. We've has quite the week here at our house....I'll spare you the details but will tell you, we were all pretty under the weather (I actually think this is the first time in our 10 years that my husband has had a fever).  After a week like that I'm left with … [Read more...]

Crock Pot Hawaiian Shredded Pork Over Rice; Gluten Free, Dairy Free, Soy Free, Nut Free Recipe

It has been absolutely FOREVER since I last posted and we're now to the point of the year where it gets really hard to get good photos of the food I'm making for dinner because it's dark at like 5pm - booo! However, because I haven't posted at all during the summer I have a whole folder full of the fresh, healthy, gluten, dairy, soy and nut free meals that I made, photographed and LOVED throughout the sunny months.  First up, this Crock Pot Hawaiian Shredded Pork, it is delicious over rice, the … [Read more...]

“Unrolled” Pork and Napa Cabbage Egg Rolls; Gluten Free, Dairy Free, Soy Free, Nut Free Recipe

Pork and Napa Cabbage Egg Rolls Unrolled (21)

Do you miss egg rolls? If you're gluten free,  dairy free, soy free, and nut free like me, there aren't many easy substitutes. I tried a rice paper egg roll and it was a disaster. We still ate it (and it tasted good) but you had to peel through a gooey layer of slimy rice paper that didnt really fry up. I was staring at this opened bottle of Sweet Ginger Chili by the Ginger People, that we ate with the failed egg rolls, in the fridge (this stuff is amazing!) And decided I needed to try again. … [Read more...]

Roast Zucchini and Yellow Squash with Thyme; Gluten Free, Dairy Free, Soy Free, Nut Free Recipe | anotsosimplelife.com

My poor mother is gluten free, dairy free, soy free, corn free, garlic free, nightshade (aka tomatoes, potatoes, peppers) free, black pepper free, and onion free. What does she eat? Not a ton, which is why I'm happy when I can cook her something that she really enjoys!  When we were up in Glen Arbor at her log cabin over the Fourth of July we cooked tacos for everyone (using this Frontera Chicken Taco Sauce Pouch over sliced chicken, and Frontera Beef Taco Sauce Pouch over ground beef) She had … [Read more...]

Gluten Free Crepes with Strawberries; Gluten Free, Dairy Free, Soy Free, Nut Free recipe

Crepe with Strawberry Title Page

I totally forgot about the strawberries that the little man and I picked last June until I reorganized my chest freezer a few weeks ago.  I had frozen these to make a batch of strawberry jam but never got around to it. They are a great reminder that you don't need to turn your fruit harvests into sugar filled jams and jellies if you've got enough freezer space!  We're approaching the end of winter, so the freshness of these sweet tiny berries was surprising. I just heated them in a saucepan, … [Read more...]

Garlicky Spinach; Gluten Free, Dairy Free, Soy Free, Nut Free

Garlicky Spinach; gluten free, dairy free, soy free, nut free recipe

So, I've been working on a post about my "I'm getting sick" meal plan for about a month now - Yes, a month! Hopefully I'll have it posted within the next week or so.  Until then, I wanted to share this recipe for garlicky spinach that is a part of the meal plan. Once you go gluten free, dairy free, and soy free,  it seems like all of the really easy side dishes go out the window (think, things that come in a box, bag, or packet)! We've been eating this quite a bit lately, mainly because it's … [Read more...]

Roast Butternut Squash with Sunflower Seeds Title

I'm constantly creating new recipes with butternut squash- The main reason, it stores for months in the pantry, so pretty much always have one or 2 on hand. The second reason, my husband doesn't like it, and I'm determined to find a recipe that he'll eat! The verdict is out on this one because he wouldn't try it - I swear he would like it though! On top of storing well, butternut squash is also really good for you, it's super high in vitamin A (1 cup has over 200% of your daily value), and … [Read more...]

Ginger & Cinnamon Spice Cookies; Gluten Free, Dairy Free, Soy Free, Nut Free Recipe

Cookies Ginger and Cinnamon

These cookies are sugar, spice and everything nice! Like nearly all of the cookies on this site, these start with my gluten free, dairy free (option), soy free, nut free, egg free (option) basic sugar cookie dough (also known as the "Master" dough). Just add a few teaspoons of spices and you have a totally different tasting, sweet, fragrant, to-die-for with coffee (seriously, I make extra batches of these and my gingerbread versions to freeze and pull out with a nice cup of coffee as a treat) … [Read more...]

Double Chocolate Chip Pancakes; Gluten Free, Dairy Free, Soy Free, Nut Free Recipe

IMG_20160114_165315

These are quite a treat! So good in fact, that I have been known to sneak a few leftover pancakes as "dessert" - cold - right out of the fridge.  If you visit my blog often you probably know about my "Homemade GF, DF, SF, NF Pancake mix". I use it ALL the time to make not only pancakes but also breads and cakes. I usually have about 10 cups on hand in a container stored in my pantry, not that it's hard to make, but when you have a 2 year old who loves to help "mix", it does tend to make a … [Read more...]
