I am OBSESSED with my gluten free, dairy free, soy free, nut free homemade pancake mix. I created it a few years ago when i decided that gluten free pancake mixes and gluten free bisquick are ridiculously expensive (why are they so expensive?) and I wouldn’t spend money on them anymore. I have been using it multiple times per week since then. Seriously, we go through a ton of it each month. Ive been really obsessed with creating new types of flavored pancakes too. Why? Because it’s fun, it’s hard to go wrong, and my 1 year old loves to accompany his fruit with a pankcake or 2 (when I say fruit I mean 3 mandarin oranges like he had yesterday or a banana, apple, and strawberries like he had the day prior- the kid loves fruit!)
I love situational cooking (and dressing btw), with the holidays quickly approaching I decided I wanted to create a Christmas-y pancake recipe. What are some of my favorite Christmas-y flavors? Cranberries…no….
Gingerbread Pancakes; Gluten Free, Dairy Free, Soy Free, Nut Free Recipe
Serves 4
Ingredients:
1 cup + 1 tbsp homemade gf pancake mix
1 cup coconut milk
1 egg
2 tbsp Organic Coconut Oil
2 tbsp Wholesome Sweeteners Organic Blackstrap Molasses
1 1/2 tsp Organic Cinnamon Ground
3/4 tsp Organic Ginger Root Ground
1/4 tsp Organic Cloves Ground
Earth Balance Organic Coconut Spread (or butter if you can have it) for cooking the pancakes
Wholesome Sweeteners Organic Powdered Sugar(optional) for dusting
Mix all of your ingredients together in a medium sized mixing bowl. Melt a tbsp of butter/cooking spread in a medium saute pan over medium/low heat. Drop dollops of you batter into the pan and cook over medium/low heat for about 1 1/2 to 2 minutes. Don’t turn up the heat and be sure to watch your cakes because the sugars in this will burn easily. Flip and cook for an additional minute. If you’re feeling really festive, dust lightly with powdered sugar (but honestly they don’t need it at all).
