So, I have about 10 draft posts about an elimination diet I did for my FIL, along with them a bunch of really great homestyle, healthy recipes for the elimination diet BUT…..I want to post these absolutely amazing, allergy friendly Christmas cookies first. Sorry! I know, January is all about New Years resolutions and healthy lifestyle changes – Well, it’s January 28th so you’ve probably all blown your diets by now anyways 🙂 just kidding! I’ll try and get this over quickly – I’m hoping to post a new recipe each day this week (if all goes well) so stay tuned! First up, gluten free, dairy free, soy free, nut free, and nut free Gingerbread Cookies (with options for egg free and corn free. These are great as drop cookies but are even better as gingerbread men accented with eggnog icing.  All of the cookies I’ll be posting start with the “Basic Sugar Cookie Dough” which I posted last year, so they’re super easy. I knocked out the dough for all of the cookies you see in the pictures in 1 afternoon (iced and decorated the next day) because you literally make a batch of the plain dough, wrap it in saran wrap, make another batch and then add the additional flavors at the end.  The recipe for the “Basic Sugar Cookie” dough came from Living Without Magazine’s December/January 2013, I’ve modified the spices and flavors.
Gluten Free, Dairy Free, Soy Free, Nut Free, Egg Free, Corn Free Gingerbread Cookies
1 recipe Basic Sugar Cookie Dough
2 tbsp Wholesome Sweeteners Organic Blackstrap Molasses
1 1/2 tsp Organic Cinnamon Ground
3/4 tsp Organic Ginger Root GroundÂ
1/4 tsp Organic Cloves GroundÂ
Make 1 batch of the Basic Sugar Cookie Dough in a stand mixer, add molasses and stir to combine. Mix in cinnamon, ginger, and clove and until combined.
Preheat oven to 350 degrees. Chill dough for 15 minutes or so if it’s too sticky to work with. Â Sprinkle a thin dusting of white rice flour on a flat surface. Â Roll dough to 1/4″ thickness and stamp out your gingerbread men. Set cookies about 1/2″ apart on cookie sheets. Bake in the preheated oven for about 12 – 14 minutes. Once cool, decorate with eggnog icing (see recipe below)!
Eggnog Icing
1 cup powdered sugar
3 tbsp So Delicious Coconut Milk Egg Nog (Or dairy free milk of choice)
Mix powdered sugar and milk until smooth. Place in piping bag to decorate your gingerbread men. Â If the icing is too thick, add more milk. To thin, add more powdered sugar.
