Dairy Free Creamy Cucumber Salad: Summer Side Dish Recipe

It can’t be summer without cucumber salad!  Since going dairy-free I’ve been making cucumber salad sans dairy but my husband really misses the kind his grandma makes with sour cream.  I had a tub of plain coconut yogurt in my fridge and decided to experiment.  Here’s the result! Because the salad is naturally a little sweet, the yogurt works really well as a creamy substitute. I like this salad best after it’s been sitting in the fridge overnight.

I’ll probably be making this a few times in the next few weeks – I’m swimming in cucumbers! I’ve picked 14 in the last week and have about 7 more that need to be picked today.  We’ve been slicing and eating them plain every day with lunch and dinner so this is a nice change.

Creamy Dairy Free Cucumber Salad

 Dairy Free Creamy Cucumber Salad Recipe

What you’ll need: We make ours with all organic ingredients

3 cucumbers, peeled and sliced

1 small onion, slices

3 tbsp apple cider vinegar

1 tsp salt

3/4 tbsp sugar

1 cup plain coconut yogurt*

1 tsp dried dill week

*I’d imagine you could use other types of diary free yogurt here too but you might need to play with the amount of sugar you need to add.

Directions:

Mix cucumber and onion in a bowl.  Add coconut yogurt, apple cider vinegar, salt, and sugar.

Creamy Dairy Free Cucumber Salad Recipe

Mix in 1 tsp dried dill weed. Chill in the fridge (preferably overnight) and serve!
