Gluten free, soy free, dairy free, nut free appetizers are hard to come by so I’ve made it my mission to come up with some of my own for today – Super Bowl Sunday. Today I’m making bacon wrapped water chestnuts (a favorite even before I went gluten, soy, dairy free ), BBQ Root Beer Crock Pot Ribs and gluten free, soy free, dairy free, nut free Asian Lettuce Wraps. This versions with ground pork and green onions. I’ll share more adaptations at some point. These are to die for! They’re great as an appetizer but would also be a fabulous dinner! They’re somewhat similar to my Asian Pot Sticker recipe but a lot LESS WORK!
The hubby and I aren’t really doing too much, just staying home and hanging with the baby but that doesn’t mean we can’t have some yummy things to munch on! Personally, I never even watch the game at Super Bowl parties anyways 🙂 – don’t even know any of the rules haha.
Asian Lettuce Wraps; Gluten Free, Soy Free, Dairy Free, Nut Free Recipe
Ingredients
1 head iceberg lettuce, or 2 heads butter lettuce
1 lb ground pork
6 green onions/scallions, chopped thinly
1 can water chestnuts, finely chopped (about 1 cup)
1 1/2 tsp grated fresh ginger
2 cloves garlic minced
1/2 tsp salt
4 tbsp Coconut Secret Coconut Aminos Soy-Free Seasoning Sauce — 8 fl oz
3 tbsp brown sugar
1 tsp sesame oil
1 tsp rice vinegar
Dipping Sauce:
4 Tbsp Coconut Secret Coconut Aminos Soy-Free Seasoning Sauce — 8 fl oz
2 Tbsp Coconut Secret Raw Coconut Nectar 12 oz
(I don’t use agave but I suppose you could probably use it here too)
1/2 Tbsp rice vinegar
1/2 tsp sesame oil
1 tsp chili garlic sauce (I got it at the asian food store also, it looks like a red spicy sauce with red pepper flakes in it)
Combine the ground pork with about 2/3 of the chopped green onions, chopped water chestnuts, grated ginger, minced garlic cloves and salt. In a separate bowl, combine Coconut Aminos, brown sugar, sesame oil, and rice vinegar. Add pork mixture toe a skillet and cook over medium/high heat until the pork is cooked through. Drain fat and return to heat. Pour the Coconut Amino mixture over the pork, stir until incorporated and brown sugar is completely melted. Garnish with remaining green onion.
To make the dipping sauce mix Coconut Aminos, Coconut Nectar, rice vinegar, sesame oil, and chili garlic sauce in a small bowl.
Serve with lettuce pieces and dipping sauce! It’s also great over rice!
