The title makes these sound like they’d be really fattening and horrible for you doesn’t it? Good news! All the flavor and texture of apple fritters but less sugar, less fat, no gluten, no dairy, no soy, no nuts :). These have only a tiny bit more sugar than my regular GF pancakes and they are great without the addition of maple syrup (so less sugar overall for us)! They are doughy on the inside, crispy around the edges, apple cinnamon-y goodness! They are the absolute perfect fall breakfast!
Honestly, I wasn’t planning on putting these on my blog because I’ve seen a lot of posts for apple pancakes around pinterest (hence why there are no pictures of the steps) but they tasted so good that I have to pass them along! I actually made a batch, then turned around and made 2 more batches to freeze because my little one loved them! I have 2 big bags of apples from the orchard and also have plans on chopping some to freeze specifically so that I have some empire apples for these later in the year!For your information, this post may contain affiliate links. If you haven’t already, I would recommend bookmarking my recipe for Homemade GF Pancake Mix and making a few batches to keep in the pantry. This recipe uses more than one batch!
Apple Fritter Pancakes with Cinnamon
1 1/4 cups of my Homemade GF Pancake Mix (click the link for the recipe)
1 cup coconut milk (or other milk of choice)
1 egg
2 tbsp oil (I use Spectrum Organic High Heat Sunflower Oil)
2 tbsp organic sugar
1 tsp cinnamon
1 tart apple, cored and chopped into 1/4″ pieces (I used Empire but you could also use Golden Delicious, Granny Smith, etc)*
*Just in case you’re wondering – I will be using my Victorio Apple Peeler to peel them (If you have been following my blog you know that I have a love/hate relationship with kitchen gadgets – for instance, I can’t live without my Rice Cooker but I refuse to buy a cherry pitter – why find somewhere to store it when you can do this “How to Pit a Cherry without a Gadget”).
Directions:
Mix all of the dry ingredients together. Fold in apple chunks. In a medium skillet over medium heat, cook pancakes in butter, coconut spread, or coconut oil. Be sure to keep the heat at medium, too high and it will burn the apples instead of cooking them. These are sweet so there’s no reason to top them with anything!
Stay tuned, I’m pretty sure I can modify these and turn them into some apple cinnamon donuts (since I so dearly missed them at the cider mill)!
