I don’t really cook many SUPER EASY dishes. “What!?” you say. I know, I’m crazy right? Not really, most of the super easy dishes I used to make were full of gluten, dairy, soy and all kinds of preservatives and nasty stuff. Think, throw some rice in a baking dish. Top with chicken breasts and some type of jiggly, creamy, full of msg canned “soup”. It’s not that I don’t like to cook easy stuff. It just tends to take a bit more prep time to cook a meal without that junk. I stumbled across this on Pinterest and decided it looked like it might be something I could have. The original recipe can be found here at Just A Pinch Recipes. YES – I can! And guess what? Throw some stuff in a baking dish, top with chicken, sprinkle with seasoning, bake and ENJOY! One dish, lots of flavor! Honestly, dinner’s gotta be easy tonight because I’ve got more important things to do like blanching and freezing the 10 heads of broccoli I have in a cooler on my deck, making some freezer salsa from the last of my tomatoes and jalapenos from my garden, and coring and freezing some of the apples we got from orchard last week :).
So here it is, a SUPER EASY Gluten Free, Dairy Free, Soy Free, Nut Free meal – Italian Chicken with Red Skin Potatoes and Green Beans. What’s even better, I just picked up some fresh red skins and one of the last harvests of green beans from the farmers market – super fresh ingredients! Italian Chicken with Red Skin Potatoes and Green Beans
1.5 lbs Chicken Breasts (3-4)
1 lb green beans, cleaned, ends trimmed
4 or 5 large red skin potatoes, cut into 1.5″ pieces (or 10 small red skins)
1/2 stick grass fed butter
1 packet of Good Seasons Italian Salad Dressing Mix
Directions:
Place cleaned green beans on one side of a glass casserole dish, place chopped red skins on the other side. Place butter in a microwavable bowl and heat until melted. Mix butter with the Italian seasoning packet. Place chicken breasts on top of the green beans and potatoes and pour italian seasoning/butter mixture over the top.
Bake at 350 degrees for 1 hour, or until chicken is cooked and potatoes are soft.
