Asparagus is in it's prime right now! All of the little farms in the outskirts of our area have signs up selling it and my son and I even went to a u-pick last week. I'm dying to post some asparagus recipes and started a post yesterday about "Canning Pickled Asparagus" but I can't post it because I actually haven't tried it yet (I like to let it sit for a few weeks before I open it). Something I can post, this gluten free, dairy free, soy free, nut free spring vegetable risotto, which ...

Leek and Cauliflower Soup
This soup is so light and flavorful. It's great as a starter, a snack, paired with a salad for a light lunch, etc. It freezes perfectly! I freeze mine in pint sizes mason jars for single sized portions that I can reheat quickly on the stove. We've has quite the week here at our house....I'll spare you the details but will tell you, we were all pretty under the weather (I actually think this is the first time in our 10 years that my husband has had a fever). After a week like that I'm left with ...
Crock Pot Hawaiian Shredded Pork Over Rice; Gluten Free, Dairy Free, Soy Free, Nut Free Recipe
It has been absolutely FOREVER since I last posted and we're now to the point of the year where it gets really hard to get good photos of the food I'm making for dinner because it's dark at like 5pm - booo! However, because I haven't posted at all during the summer I have a whole folder full of the fresh, healthy, gluten, dairy, soy and nut free meals that I made, photographed and LOVED throughout the sunny months. First up, this Crock Pot Hawaiian Shredded Pork, it is delicious over rice, the ...

This is gluten free, dairy free, soy free, nut free, Spring cooking at it's finest! I made this Caribbean Salmon with strawberry pineapple salsa for the second time 2 nights ago and posted a picture on facebook - everyone was claiming that they were actually drooling :). Let me tell you, it's something to drool about for sure! Garlicky Spinach; Gluten Free, Dairy Free, Soy Free, Nut Free
So, I've been working on a post about my "I'm getting sick" meal plan for about a month now - Yes, a month! Hopefully I'll have it posted within the next week or so. Until then, I wanted to share this recipe for garlicky spinach that is a part of the meal plan. Once you go gluten free, dairy free, and soy free, it seems like all of the really easy side dishes go out the window (think, things that come in a box, bag, or packet)! We've been eating this quite a bit lately, mainly because it's ...
Roast Butternut Squash with Cranberries, Sunflower Seeds, & Honey Vinaigrette; Gluten Free, Dairy Free, Soy Free, Nut Free Recipe
I'm constantly creating new recipes with butternut squash- The main reason, it stores for months in the pantry, so pretty much always have one or 2 on hand. The second reason, my husband doesn't like it, and I'm determined to find a recipe that he'll eat! The verdict is out on this one because he wouldn't try it - I swear he would like it though! On top of storing well, butternut squash is also really good for you, it's super high in vitamin A (1 cup has over 200% of your daily value), and ...
Ginger & Cinnamon Spice Cookies; Gluten Free, Dairy Free, Soy Free, Nut Free Recipe
These cookies are sugar, spice and everything nice! Like nearly all of the cookies on this site, these start with my gluten free, dairy free (option), soy free, nut free, egg free (option) basic sugar cookie dough (also known as the "Master" dough). Just add a few teaspoons of spices and you have a totally different tasting, sweet, fragrant, to-die-for with coffee (seriously, I make extra batches of these and my gingerbread versions to freeze and pull out with a nice cup of coffee as a treat) ...
Lemon Caper Chicken Breasts over Spaghetti Squash; Gluten Free, Dairy Free, Soy Free, Nut Free Recipe
I guess this is kind of like an allergy friendly chicken picatta. I've recently learned (from a quick visit to wiki) that the picatta style of cooking means cutting the chicken breasts in half, then pounding them flat. Then frying and covering in a sauce. Kinda similar. I first made this for my mother who is gluten free, dairy free, soy free, nightshade free *meaning no potatoes, tomatoes, or peppers*, onion free, garlic free, and black pepper free - OMG something free of all of those things ...
Shepherd’s Pie with Ground Beef (Cottage Pie); Gluten free, Dairy Free, Soy Free, Nut Free, Recipe
Allergy friendly comfort foods can be hard to find. I hate to say it but I think even harder to find in America. Why? Well, for me personally, many of my "comfort foods" growing up incorporated a "cream of something" soup. You don't find that in Italian comfort food, or French comfort food, or Mexican comfort food. It's winter, it's cold, and I want MORE comfort food! Because of that, I'm reaching out to other countries and learning how I can modify their comfort food recipes for myself. Which ...
Braised Red Cabbage; Gluten Free, Dairy Free, Soy Free, Nut Free Side Dish Recipe
Years ago when I was visiting Chicago, probably like 2 years before I moved there (and years before I changed my diet) I went to a restaurant on Michigan Ave called Bandero. The food was good, not Michelin star or anything but but higher quality than most. Oddly, years later I would work less than a block away at the newspaper there. Years later, when I moved to Chicago, I walked past the restaurant and remembered the delicious sweet braised red cabbage, topped with goat cheese, that I had ...
