Mexican is a staple at our house because it’s easy and quick. This pulled chicken taco, burrito, taquito, nacho, tostada meat is gluten free, soy free, and dairy free! It’s also flavorful without using those full of preservative packets.  We make this every few weeks.  We make a lot of the meat and make multiple meals out of it.  Sometimes, we’ll just cook the meat in the crock pot and add seasonings after so we can mix half of the meat with barbecue sauce and have pulled chicken sandwiches.

Ingredients

  • 2 lbs boneless skinless chicken thighs (we only eat organic)
  • 1 onion, chopped
  • 2 tbsp homemade taco seasoning found here
  • 2 tbsp brown sugar (we use Wholesome Sweeteners Organic Dark Brown Sugar)
  • 1 cup salsa, I just recently found a really delicious organic one at Aldi or we like, Muir Glen Organic Medium Salsa, 16 Ounce
  • 1 can green chilies (optional)

Instructions

  • Ok, this is really hard 🙂 Put the onions and chicken thighs into the Crock Pot. Mix 2 tbsp brown sugar with 2 tbsp taco seasoning, sprinkle of the chicken thighs. Cook on low for 6 hours.
  • Shred the chicken with 2 forks (it should shred really easily), mix in salsa and chopped green chilies. Let cook for another 1/2 hour. Serve with your choice of tortilla, tostada, corn chips, etc and your favorite gf, sf, df, nf toppings!
