Asian Lettuce Wraps; Gluten Free, Soy Free, Dairy Free, Nut Free Recipe

February 2, 2014 by Kristina 1 Comment

Gluten free, soy free, dairy free, nut free appetizers are hard to come by so I've made it my mission to come up with some of my own for today - Super Bowl Sunday.  Today I'm making bacon wrapped water chestnuts (a favorite even before I went gluten, soy, dairy free ), BBQ Root Beer Crock Pot Ribs and gluten free, soy free, dairy free, nut free Asian Lettuce Wraps. This versions with ground pork and green onions.  I'll share more adaptations at some point.  These are to die for! They're great as ...

Garlic Lemon Spinach Recipe, Gluten Free, Dairy Free, Soy Free Sides

January 30, 2014 by Kristina Leave a Comment

My husband loves Chicago steakhouses. I'm not going to lie, I do too - sometimes there's just nothing better than a hunk of red meat and lots of butter.  With a new baby its going to be a while until we get out for a night on the town so I figured I would make a few of the steakhouse sides at home- like Garlic Lemon Spinach. So here it is... Garlic Lemon Spinach Recipe Ingredients 2 pounds fresh spinach, washed and dried 1 tbsp olive oil 6 cloves garlic, minced 1 ...

How to Make Homemade Chicken Broth in a Crockpot

January 8, 2014 by Kristina 6 Comments

Yesterday I posted how my recipe for making a rotisserie chicken in the Crock Pot.  One of my favorite things about that recipe is that you can also easily make homemade, preservative free chicken broth without any additional effort or dirty dishes.  Here's how... Homemade Preservative Free Chicken Broth (made in a Crock Pot) After dinner,  remove all of the meat from the chicken bones and store for a later use. Keep all of the bones and juices in the crock pot (I usually keep some of the ...

Crockpot Rotisserie Whole Chicken Recipe – Gluten Free, Soy Free

January 5, 2014 by Kristina 4 Comments

It's easy meal week.... why? Because it's been a hell of a week! First up, Crock Pot Rotisserie Chicken. This is one of the first flavorful dishes I made when my husband and I went gluten and soy free.  This is super easy because you only need 2 ingredients; plus, we usually have enough left overs for a few meals.  This recipe calls for a whole chicken but you could also use a whole chicken cut up, bone-in chicken thighs, or even chicken breasts - I personally would recommend utilizing pieces of ...

Gluten Free, Soy Free, Dairy Free Beef Stroganoff

December 18, 2013 by Kristina 3 Comments

I've been craving comfort foods - it's cold, it's cloudy, and I have a baby so I spend most of my days in the house. I found some noodles at the store that look like egg noodles and I decided that it was time to try and make some gluten free, soy free, dairy free beef stroganoff.  I've had a container of Pacific Creamy Portabella Mushroom soup in the pantry for months to try and create this recipe. Growing up my mom always made her beef stroganoff with Cream of Mushroom soup - she also didn't ...

Portuguese Kale and Chorizo Soup Slow Cooker Recipe, Gluten Free, Soy Free

December 9, 2013 by Kristina 14 Comments

So, the weather's finally turned freezing here in Chicago so it's time to get the kale out of the ground. I still feel like a really crazy new mother without a ton of time to cook or eat, so I've decided to make some soup. Amazing because I can dump everything a pot, and I can eat it one bite at a time as I have time :) This can be made on the stove top, but I decided to make it in the crock pot because I just don't have the time to watch a pot on the stove. The soup is great the day it's made ...

Gluten Free, Soy Free Teriyaki Beef Recipe

December 5, 2013 by Kristina 1 Comment

So.... I am now a proud momma of a 13 week old baby boy. You didn't know you say? I know,  I didn't tell you.  Needless to say, that's the reason I haven't posted in about 13 weeks.  Life has gotten a lot busier since having the little one, but unfortunately, the diet must stay the same. What does that mean? I've been eating a lot of corn chips...and so I can get some vegetables....salsa. Today I feel a lot more sane. The baby has gotten into a really good sleep schedule. Me and the hubby are ...

Organic Canning: Bread and Butter Pickles Recipe

August 27, 2013 by Kristina 1 Comment

My pickling cucumbers are finally starting to produce quick enough that I can start making pickles.  My favorite? Bread and butter pickles! This was the first type of pickle I ever canned and a favorite with my family and friends! My grandma said, "Well, I thought I made the best bread and butter pickles but I might be wrong"! We can eat a jar a day.  Last year I didn't make enough - Only 2 batches and I had family begging for more.    This is my second batch of this year and I'm hoping to make ...

Gluten Free, Dairy Free, Pasta Primavera with Garlic Butter Sauce Recipe

August 26, 2013 by Kristina Leave a Comment

Pasta Primavera is a dish that consists of pasta and veggies - perfect, because that's what I have! I loaded up at the farmers market last week and I have TONS of veggies that should be used up in the next few days. I'm not sure why but ever since being GF and DF I've only made pasta with marinara sauce. I never even thought about trying anything else.  I'm literally drooling right now while writing this.  The left overs of this pasta primavera are gone and I want more! Pasta Primavera with ...

Organic Canning: Pickled Cherry Tomatoes with Rosemary

August 22, 2013 by Kristina 1 Comment

What should I do with tons of cherry tomatoes? I have WAY too many to eat plain, so I'm making pickled cherry tomatoes! I have been harvesting a pint or so every two days.  I'm now to the point where I have 15 cups + additional for eating - enough for 3 batches!  These pickled cherry tomatoes would be great in a holiday relish tray (yes, I'm bringing them back) or as an appetizer served with some crusty gf bread.  This recipe also came from my 2011 Better Homes and Gardens Canning Magazine - Of ...

It’s cold and rainy in Michigan today and I’m wishing I had some homemade chicken broth ready for a soup like this one. This soup is naturally gluten free, dairy free, soy free, nut free, egg free and can be easily made vegan. It also could easily be made nightshade free with the elimination of…
