How to Cook Sea Scallops: Pan Seared Sea Scallops Recipe

August 21, 2013 by Kristina Leave a Comment

Pan seared scallops aren't on the menu very often - why? Because they're like $3.00 each! Occassionally we'll pick a few up to accompany something else. They're super quick, easy, and delicious. My husband and I don't have the same taste in TV.  If it was his choice, he'd have the Speed channel on 24/7.  Me, I'd rather be watching reality TV (guilty pleasure ok?).  The only thing we can compromise on is watching cooking shows, so naturally, that's usually whats on our TV.  My husband picked up ...

When to Harvest Jalapeno Peppers? My Organic Garden

August 20, 2013 by Kristina Leave a Comment

When do you harvest jalapeno peppers? Since they're picked when they're green (most of the time), it can be hard to tell. Peppers can be tricky to grow and a lot of years I end up spending more money and time than it's worth to even plant them, except for jalapenos. I'm not a huge fan of hot stuff so usually by mid-season I'm giving extras away to my heat loving colleagues.   I never really knew when to harvest them so I'd pick them whenever.  There is a "correct" time so this year, I'm making ...

Dairy Free Creamy Cucumber Salad: Summer Side Dish Recipe

August 19, 2013 by Kristina Leave a Comment

It can't be summer without cucumber salad!  Since going dairy-free I've been making cucumber salad sans dairy but my husband really misses the kind his grandma makes with sour cream.  I had a tub of plain coconut yogurt in my fridge and decided to experiment.  Here's the result! Because the salad is naturally a little sweet, the yogurt works really well as a creamy substitute. I like this salad best after it's been sitting in the fridge overnight. I'll probably be making this a few times in the ...

Ham and Zucchini or Broccoli Quiche Recipe; Gluten Free, Dairy Free, Soy Free, Nut Free

August 16, 2013 by Kristina 2 Comments

This is a household favorite. I love this recipe because it's great with zucchini; it's also great with broccoli. Sometimes I make 2 of them on a Sunday and we'll bring it for breakfast to work.  It tastes just as great days after it's made.  It's also great to make if you're having company.  Bake the night before and just pop it in the oven to reheat in the morning. What else do I love about this?  1 carton of rice milk, 1 mini ham from Whole Foods, and 1 bunch of broccoli makes exactly 4 pies ...

Organic Canning: Tart Cherry Jam Recipe

August 15, 2013 by Kristina Leave a Comment

Get your tart cherries while you still can! I've heard this is the last week!  I personally bought a TON of tart cherries a few weeks ago. I guess you can only get them in a few parts of the country - I'm in one of those areas. They go bad pretty quickly so they're really only available at farmer's markets - If you get some, use them quickly! I cooked with some of them, froze some of them, and still had about a million and 12 left. Because they're not very good eaten plain, I decided to can the ...

GF Bisquick Copycat Recipe, GF Pancake Mix; Gluten Free, Soy Free, Dairy Free, Nut Free Pancake Mix Recipe

August 14, 2013 by Kristina 7 Comments

I never really liked pancakes growing up - they always made me feel blah when I ate them.  Same with milk. I wonder why? Hmmmm maybe because they were full of things I'm intolerant too!  A few months after cutting gluten out of my diet I found gluten free Bisquick and made some pancakes.  They were delicious, but the store bought mix was expensive and kind of grainy! It couldn't be too hard to mix up a pancake mix of my own - here are the results - my Gluten Free, Soy Free, Dairy Free, Nut Free ...

Organic Canning: The BEST Corn Relish Ever Recipe

August 12, 2013 by Kristina 2 Comments

So, last year I made like 4 batches of corn relish.  I thought for sure I was going to have millions of jars left in the pantry come corn season this year but nope! All of a sudden everyone I know LOVES corn relish (I really had no idea) and even people who don't like it seem to like this kind.  I kid you not, I gave it to grandparents, parents (3 different sets), friends, siblings, and more - every single one of them said that it was the BEST corn relish they've ever had!  Most ate the entire ...

How to Cook Planked Great Lakes Whitefish in the Oven

August 9, 2013 by Kristina Leave a Comment

The absolute best whitefish I've ever had was in Kilarney, Canada a little town on the Northern Shore of the Georgian Bay in Ontario.  You literally watch the fishing boats coming in, they take the whitefish, clean them, and then bring them out to an old red school bus turned food stand where they fry it. The second best, from Charlevoix, MI, where I've vacationed since I was born.  That's where I was introduced to planked fish - which I recreate at home all the time! It makes for a light and ...

Roasted Corn with Jalapeno and Lime: Summer Side Dish Recipe

August 8, 2013 by Kristina 4 Comments

I'm quite the baby when it comes to spicy food but every year I decide to grow jalapenos and then feel guilty if I don't use them.  I had a few that turned red which means they need to be picked.  I also bought some extra corn at the farmers market (25 ears to be exact - well, 20 of them are laying around waiting to be turned into corn relish) - so, what's for dinner? Some Great Lakes Whitefish and roasted corn with jalapenos.  My hubby and I had an amazing corn side dish at Michael Jordan's ...

How to De-Kernel Corn: The Easiest and Least Messy Way Possible

August 7, 2013 by Kristina 3 Comments

It's corn season! Yum! I happen to have a husband that had his front teeth knocked out in a motorcycle accident before we met years ago (yes - he has teeth- but they're veneers) sooooo around my house we don't eat much corn on the cob.  Solution - get the corn off the cob! If you know me you know that I have a love/hate relationship with kitchen gadgets.  First, so many of them are so pointless - have you seen the banana slicer?  Really? Is it that hard to slice a banana on your own?  How big ...
