So, I’ve been working on a post about my “I’m getting sick” meal plan for about a month now – Yes, a month! Hopefully I’ll have it posted within the next week or so. Until then, I wanted to share this recipe for garlicky spinach that is a part of the meal plan. Once you go gluten free, dairy free, and soy free, it seems like all of the really easy side dishes go out the window (think, things that come in a box, bag, or packet)! We’ve been eating this quite a bit lately, mainly because it’s super easy – the spinach comes pre-washed and ready to eat (although I usually still like to wash it) so there’s minimal prep.
This recipe is gluten free, dairy free, soy free, nut free, egg free, nightshade free, yeast free, and is even allowed on the elimination diet! Even if you’re not following a special diet, I would consider adding more spinach into your diet; mainly because it’s a powerhouse of nutrients! “Spinach is an excellent source of vitamin K, vitamin A (in the form of carotenoids), manganese, folate, magnesium, iron, copper, vitamin B2, vitamin B6, vitamin E, calcium, potassium, and vitamin C. It is a very good source of dietary fiber, phosphorus, vitamin B1, zinc, protein, and choline” Source. So, it’s easy, it’s nutritious, AND this recipe does double duty, as it’s delicious with dinner and then the leftovers are great with eggs in the morning (in fact, I’m going to add it to my list of “veggies for breakfast” posts). Garlicky Spinach; Gluten Free, Dairy Free, Soy Free, Nut Free
Ingredients
- 1 lb baby spinach (that is the very large package that can be found at Costco)
- 4 to 6 cloves garlic
- 1 medium onion, finely chopped
- 1/2 cup homemade chicken broth (or Pacific Foods Organic Chicken Broth)
- 1 tbsp avocado oil (or other high heat cooking oil)
- Celtic Sea Salt, Fine Ground
Instructions
- Heat oil in skillet over medium heat, add onions and saute for 4 minutes or until beginning to become translucent. Add minced garlic, stir, and cook for 30 seconds. Add broth and spinach. Toss until wilted and evenly cooked, it only takes a minute or so. Enjoy!
